About Me

I am Charlotte, a pastry chef wannabe student @Le Cordon Bleu, Sydney, and welcome to my culinary world. This food blog here is to record my journey into the food world, and more importantly, to express myself with every dish, from sweet to savoury and everywhere in between.

Why Koalified? It’s my baking philosophy. To me, the best desserts are the ones that fill you with a genuine sense of joy, from the first look right down to the last bite. To do this, I play and experiment, focusing on how every last ingredient fits together to produce honest and exciting flavour combinations. I don’t over complicate or exaggerate, everything is as it should be. This means less sugar and a greater emphasis on how natural ingredients work together. Sure, desserts aren’t a necessity in life, but at the end of the day, I want people to feel that joy without any of the guilt.
